I generally understand its existence, but when I install OS Updates:
1.) Why does the Audit Setting Change from its original to a "new" setting?
- Is it a 'good' thing?
- Should I be concerned enough to reverse its change?
- How does one "decipher" the settings?
- What does ";;;" mean in the SDDL string

Whether it's a good thing or not depends on the change. If you are interested in details of SDDL then take a look at https://docs.microsoft.com/en-us/windows/desktop/secauthz/security-descriptor-definition-language.
